A fresh white wine, pleasantly persistent with a good balance of acidity and minerality. Straw yellow with floral notes and a ripe lemony flavour that seems indicative of its Sicilian heritage. The mineral-rich, volcanic soil of Etna combined with the high altitude above sea-level (700 asl) gives these wines intense character and complexity without the weight sometimes associated with Sicilian wines. This particular wine is aged for 4 months in mildly toasted French Tonneau (500l) and can develop a somewhat favourable complexity over time. Only 3000 bottles produced.
Food: Enjoy it with seafood risotto, a fritto misto (on the beach) or a rare tuna steak. Sicilian Pecorino chunks (tangy sheep’s cheese) and Nocellara olives.
