- Up there with the noblest of Italian grape varieties comes the once almost extinct Timorasso, a wine of such intense minerality and herbal aromas that you savour every mouthful. Timorasso is mainly cultivated in the Colli Tortonesi in Piedmont by highly skilled and experienced winemakers.
- Giovanni Daglio’s Cantico has notes of wild herbs and flint on the nose, whilst the mouthfeel is warm and enveloping with a persistent salinity. After several years of ageing in bottle the aromatic and mineral intensity reaches its peak.
- Enjoy it with rich, creamy dishes: risotto with Toma cheese or a steaming bowl of fresh gnocchi with pancetta and pesto or simply some warm focaccia bread sprinkled with a pinch of sea salt and a glug of olive oil.
