Sparkling white wine, zero dosage, made without the addition of added sugar at the time of bottling. The particular vinification process preserves the quality of the Pinot Noir and the sunshine that dries the grapes on the vines also imbues the wine with its bright golden yellow highlights. The mass of tiny bubbles are creamy and soft with a lemon, pear and toasted almond finish. By all means, serve it as an aperitif with a selection of meat and cheese cuts but the small bubbles make it a good accompaniment to main course lunches and suppers. A hearty fish pie with cream and potato will pair well as will thin cuts of sliced roast beef and pastrami.
