- Valpolicella Ripasso. Ripasso means this is a fuller, richer style of Valpolicella; it literally means to re-pass, which is exactly how this wine is created, by repouring it over the heavily concentrated skins and pulp of the Amarone. What you're left with is an injection of spicy, velvety black cherry and dark chocolate, with hints of tobacco and vanilla essence, these last components much due to year-long ageing in wood barrels.
- Released after a prolonged time both in barrel and bottle, this wine should be consumed within several years of vintage so as not to lose that ripe dense fruitiness that's so synonymous with Valpolicella wine. Herein lies the piggy in the middle; richer than Valpolicella but softer than Amarone.
- Grapes are dried for 30 to 40 days followed by fermentation in stainless steel on the Amarone skins.
Ageing in second passage French oak for 30 months, followed by 6 months in stainless steel. Further ageing in bottle for 2 years prior to release. Total production of Ripasso is 5,000 bottles. - This is a wine for someone who wants to push the boundaries slightly, enjoys rich desserts like chocolate gateaux, or a pile of profiteroles. On a savoury note, fillet steak with Bearnaise sauce and peppery hand-cut chips.
