Although Merlot thrives just about anywhere, the relatively late-ripening Cabernet Sauvignon is not always easy to mature in inland zones such as Chianti Classico. On the coast in and around Bolgheri, however, the maritime influence moderates the climate, so that day to night temperature fluctuations are not too dramatic and the intense heat is checked by the cooling sea breeze. As the superTuscan craze has spread, Cabernet and Merlot have taken on a life of their own in this pocket of Tuscany where, importantly, the wines don't taste like Cabernet Sauvignons, Merlots (and Syrahs) from everywhere else in the world. They take on tarry, woodsy notes that make them uniquely Tuscan. This deeply-coloured blend is heady and powerful, giving off aromas of black plum, dried cherry, clove and hints of eucalyptus and fresh mint; velvety in mouthfeel with concentrated black cherry, blueberry, liquorice and bell pepper, alongside firm, chewy tannins. Aged for 18 months in French tonneaux with a further 6 months’ refinement in bottle before release, this wine is well suited to meaty dishes like an osso buco or casserole and a mature cheese such as Gorgonzola. Serve at 18-20 degrees and open at least an hour to 2 before serving. Wine Spectator scored this 92/100 points.
